Fried Pie

| Tip:
Dave Sargent of Sargent Farms recommends frying
your fried pies in peanut oil or soy bean oil. These oils
don't seem to penetrate the dough, making your pies less greasy.

| Pastry: |
| 3 cups all purpose flour |
| 1 teaspoon salt |
| 2 teaspoons baking powder |
| 2 teaspoons sugar |
| 3/4 cup lard or shortening (we prefer lard) |
| 3/4 cup milk |
| Filling: |
| 3 cups dried fruit (apples, apricots,
peaches or prunes) |
| 1 1/2 cups water |
| 6 tablespoons sugar |
| 1/4 teaspoon Cinnamon |
| 1/4 teaspoon Allspice |
| Method: |
| Mix together flour, baking powder, sugar and salt. Cut in the |
| lard/shortening with a pastry blender, |
| or fork, until mixture
resembles coarse crumbs. |
| Sprinkle milk over flour mixture |
| mixing lightly with hands
until dough |
| comes together in a ball. |
| Do not over work the dough. |
| |
| Filling: Cook the dried fruit in the water |
| simmering over low heat for
about 30 |
| minutes, until very soft.
Cool and mash |
| fruit slightly. Stir
in sugar and spices. |
| Assembly: Divide the dough into 12 |
| balls. Roll out or
shape with the Fried |
|
| Pie Press into 5" circles.
Place 2 table- |
| spoons filling onto one side
of the |
| dough. Using water, wet the
dough |
| edge slightly. Fold dough
over filling making a |
| half moon.
Crimp with a fork to seal well. |
| Deep Fry in hot oil
375 degrees 3 to 4 minutes until |
| golden brown. Sprinkle with icing sugar or
glaze with |
| icing sugar mixed with a
little water. |
