Gluten Free Empanada Dough Recipe |

great in the Fried Pie/Empanada Machine |
| 1/4 cup tapioca flour |
| 1/4 cup sweet rice flour or glutinous
rice flour |
| 1/3 cup cornstarch |
| 1/3 cup chickpea flour |
|
| 1 Tbsp. guar gum or xanthum gum |
|
| 1 Tbsp. potato starch |
| 1/2 teaspoon salt |
| 3 eggs |
| 1 Tbsp. oil |
| |
| Method: |
| Mix dry ingredients into a medium sized
bowl. |
| In a measuring cup mix together the 3
eggs and 1 tablespoon oil with a fork. |
| Stir egg mixture into flour mixture with
fork until it begins to hold together. |
| Work dough with your hands 1 - 2 minutes
until it holds together and is |

smooth. This is a firm dough. |
|
| This dough forms really well in the
Birds Hill Fried Pie/Empanada Machine. |
|
| Otherwise roll into a 5 inch circle.
Put 1 tablespoon filling on one half of |
|
| circle. Fold and crimp well.
Place on oiled baking sheet. Brush tops of |
|
| empanadas with peanut or other oil. |
| Bake at 400 F for 12-15 minutes until
light brown. |
