  Cowboy Cookies Return recipe index
- Gluten Free Mock Oatmeal/Chocolate Chip Cookies
1 cup margarine  
1 cup white sugar
1 cup brown sugar
2 eggs  
1 teaspoon vanilla extract  
1 teaspoon guar gum  
1 cup rice flour  
1/2 cup cornstarch  
1/2 cup potato starch  
1 teaspoon baking soda  
1/2 teaspoon baking powder  
1/2 teaspoon salt  
1 cup chocolate chips  
2 cups Buckwheat Flakes or Quinoa Flakes  
Cream together margarine, sugars, egg, and vanilla.  Sift together the flours,
baking soda, baking powder, guar gum  and salt.  Mix into the creamed  
mixture.  Stir in the Buckwheat or Quinoa Flakes and chocolate chips.  
Drop by rounded tablespoon onto greased cookie sheet.  Flatten slightly  
with a fork.  Bake at 350 for about 10 minutes, until light brown.
